What is Pancit Lomi?

Pancit Lomi (Lomi Batangas) is a popular Filipino noodle soup especially in the province of Batangas and is often enjoyed as an afternoon snack or afternoon meal.

Just like any other pancit dish, this is often partnered with a bunch of ingredients, ranging from meat, vegetables, and sometimes, seafood. This irresistible dish is characterized by the distinct thick and soft noodles used—the lomi noodles. 

What are Lomi Noodles?

Lomi noodles are a type of thick egg noodles which are usually soaked in lye water during the process of making it and are characterized by having a thick and chewy texture.

The popular Lomi from Batangas includes—of course—the lomi noodles as the primary ingredient, along with a variety of meat cuts such as chicken, some vegetables, and a soup which is thickened by using a cornstarch mixture.

Ingredients You’ll Need

Aside from the noodles, you will be needing a variety of other ingredients to come up with this dish.

Meats

For this recipe, we will be using chicken breast and liver, and eggs. These will go with the soup but you may add other meats as toppings like lechon kawali or fried chicken.

Vegetables

You can also add basic vegetables like carrots, cabbage, spring onions in this dish if you like.

  • Cooking Pot (Kaldero)- Lomi is a one pot dish and you will be needing the same cooking pot for the whole process. Since this is a soup dish, you have to use a deep pot or casserole.

How to Cook Pancit Lomi

The process of making pancit lomi is pretty much your everyday style of cooking. But it can be quite overwhelming to think about since it involves a lot of ingredients.

Making this a successful dish can be pretty satisfying though, so it is definitely something worth doing! To avoid confusion with your ingredients, just visualize the process of what you need to do:

First, cook the meats (for this recipe, the chicken) then the noodles, and then the vegetables followed by the sauce. It’s all one smooth flow of cooking. After that you’re just going to mix them all together.

When cooking the meat ingredients, it is advisable to cut them as equal as possible so they can be evenly cooked in the pan. Cutting it in smaller sizes is also good as the insides will be cooked easily and the whole dish will be more flavorful in every bite.

When cooking the vegetables, it is generally a good idea in pancit recipes to blanche them first. This is because it will still be cooked once you mix all the ingredients, and vegetables can be easily overcooked.

Overcooked vegetables will result in them being soggy, and it will give a quite unpleasant feeling when eating the pancit.

How to Store and Reheat Pancit Lomi

To store leftovers, make sure you allow it to cool to room temperature then transfer it to clean food container with lid. Refrigerate for up to 3 days.

To reheat, you can use a microwave oven or in a stove. Apply medium heat until the soup is hot enough to consume.

Ingredients

  • 250 g (8.8 oz) lomi noodles
  • 250 g (8.8 oz) chicken breast, boneless and cut into serving pieces
  • 1 cup chicken liver
  • 1 pc medium-sized onion, chopped
  • 6 cloves garlic, minced
  • 1 cup carrots, chopped
  • 1 pc small-sized cabbage, chopped
  • 2 pcs eggs, beaten
  • 2 tbsp fish sauce
  • 1 tbsp cornstarch, diluted in ¼ cup water
  • 5 cups water
  • 1 cup chicken broth
  • 3 tbsp cooking oil
  • salt and pepper, to taste
  • Optional toppings like: hardboiled eggs, chicharon, kikiam, squid balls, meatballs, etc

Instructions

  • In a cooking pot, pour in and heat oil over medium heat.
  • Add in the garlic and onions. Saute for 1 to 2 minutes or until tender and aromatic.
  • Add in the chicken breast, and fish sauce. Cook until lightly browned.
  • Pour in the water and chicken broth. Bring to a boil. Simmer the chicken for 15 to 20 minutes or until tender.
  • Add in the lomi noodles. Cook for 5 to ⁠8 minutes or until tender and firm.
  • Add in the chicken liver and season with salt and pepper. Cook for 2 minutes.
  • Add in the carrots, and cabbage. Cook for 1 to ⁠2 minutes.
  • Add in the diluted cornstarch and stir. Cook until slightly thickened.
  • Slowly add in the egg and then stir. Mix until well incorporated.
  • Transfer to a serving plate or serving tray. Serve and enjoy! (Optional: serve with chopped onions and toyomansi)
