Ingredients
500g(w1.1 lbs) miki noodles, or egg noodles
4pcsIlocos longganisa, sliced
1pctomato, cut into small serving pieces
1pcmedium-sized onion, chopped
5clovesgarlic, minced
3stalks spring onion, chopped
3pcsegg, beaten
2tbspshrimp paste, (bagoong alamang)
salt and pepper, to taste
3tbspcooking oil, for sauteing
Instructions
Cook the noodles in boiling water for 3 to 4 minutes or until soft. If the package has instructions, you can follow it. Set aside.
In a cooking pan, pour-in and heat cooking oil over medium heat.
Add-in the Ilocos longganisa. Cook for 3 to 5 minutes.
Add-in the chopped onion, and minced garlic. Saute for a while and then add-in the shrimp paste. Saute until soft and aromatic.
Add-in the tomatoes, and then add-in the cooked noodles, and spring onions. Stir fry for 1 minute and then season with salt and pepper.
Make a space at the center of the pan and then add the beaten eggs. Let it cook for a while and then break the egg and mix all of the ingredients until well-incorporated. Stir fry for another 1 minute.
Transfer to a serving tray or serving plate. Serve and enjoy!
