Authentic Pancit Lusay Recipe

Yummy Ilocano pancit dish with special Ilocano ingredients

Ingredients

  • 500 g (w1.1 lbs) miki noodles, or egg noodles
  • 4 pcs Ilocos longganisa, sliced
  • 1 pc tomato, cut into small serving pieces
  • 1 pc medium-sized onion, chopped
  • 5 cloves garlic, minced
  • 3 stalks spring onion, chopped
  • 3 pcs egg, beaten
  • 2 tbsp shrimp paste, (bagoong alamang)
  • salt and pepper, to taste
  • 3 tbsp cooking oil, for sauteing

Instructions

  • Cook the noodles in boiling water for 3 to 4 minutes or until soft. If the package has instructions, you can follow it. Set aside.
  • In a cooking pan, pour-in and heat cooking oil over medium heat.
  • Add-in the Ilocos longganisa. Cook for 3 to 5 minutes.
  • Add-in the chopped onion, and minced garlic. Saute for a while and then add-in the shrimp paste. Saute until soft and aromatic.
  • Add-in the tomatoes, and then add-in the cooked noodles, and spring onions. Stir fry for 1 minute and then season with salt and pepper.
  • Make a space at the center of the pan and then add the beaten eggs. Let it cook for a while and then break the egg and mix all of the ingredients until well-incorporated. Stir fry for another 1 minute.
  • Transfer to a serving tray or serving plate. Serve and enjoy!
