Fluffy Ube Pandesal With Cheese Recipe

Ingredients

  • 3 ½ cups all-purpose flour
  • 2 tbsp ube flavoring
  • 200 g (7 oz) quick melt cheese, cut into 6 or 7 slices
  • 2 tsp active dry yeast
  • 2 tbsp vegetable oil
  • 1 cup warm milk
  • 2 pcs eggs, beaten
  • 1 tsp vanilla extract, optional
  • 6 tbsp granulated sugar
  • 1 tsp salt
  • ½ cup breadcrumbs

Instructions

  • In a large bowl, add-in the all-purpose flour, sugar, and salt. Mix until well-incorporated.
  • Slowly pour-in the beaten eggs, warm milk, vanilla extract, and oil. Combine and then add-in the active dry yeast. Mix until well-incorporated.
  • Add-in the ube flavoring. Mix all of the ingredients until well-incorporated or until dough comes together and is sticky enough.
  • In a flat workspace greased with oil, place the dough. Grease hands with oil and knead for 7 to 10 minutes or until smooth and soft, but still intact.
  • In a large bowl greased with oil, place the dough. Let it rise for 30 to 120 minutes or until it doubles in size.
  • Gently press down the dough and divide it in half.
  • Shape one half into a log shape and then cut to 6 or 7 pieces. Repeat this step for the other half.
  • Flatten the pieces using your hands and then place a slice of cheese in the center of each one. Roll the dough around it, forming a ball and sealing the cheese.
  • Dredge the balls with breadcrumbs and then arrange in a baking sheet with enough space. Let it rise once again for 30 to 60 minutes or until it doubles in size.
  • Preheat the oven to 350 F (177 C). Bake the pandesal for 20 minutes or until lightly browned.
  • Transfer to a serving plate or serving tray and keep it warm. Serve and enjoy!
