Coffee Crumble Cookies

Ingredients

  • 1 ½ cups all-purpose flour
  • 3/4 to 1 cup brown sugar, depends on your taste
  • ½ cup butter or margarine, softened
  • 1 pc egg
  • 2-3 tbsp instant coffee
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup chopped nuts, cashew, peanuts, or walnuts
  • 2 cups chocolate chunks, or 1 cup chocolate chips, your choice if dark or milk chocolate

Instructions

  • In a large mixing bowl, combine softened butter (or margarine), egg, and sugar.
  • If you have an electric mixer, beat on medium speed until creamy. You can also do this manually with a spoon.
  • Add-in the flour, baking soda, salt, and coffee and mix well.
  • Stir-in the nuts and chocolate.
  • Refrigerate for 30 minutes. Drop the dough into a cookie sheet/ pan. You can use ¼ cup for big cookies or 2 tbsp for smaller cookies.
  • Preheat your oven to 175 C (350 F). Bake for 12 to 15 minutes or until golden brown.
  • Cool for about 5 minutes before removing from the cookie sheet/ pan.
  • Transfer to a wire rack or clean plate and allow to cool for 30 minutes before serving. Enjoy!
