Ingredients
500g(1.1 lbs) kamote (sweet potato), peeled and mashed (see notes above)
2cupsall-purpose flour
1tbspbaking powder
3tbsppowdered milk
1cupsugar
2tbspbutter, melted
3pcsegg
cooking oil, for frying
Instructions
In a large mixing bowl, add-in the all-purpose flour, baking powder, powdered milk, and sugar. Mix until well-incorporated
In another bowl, add-in the mashed kamote, eggs, and melted butter. Whisk until the mixture is thick and well-incorporated.
Add-in the flour mixture into the kamote mixture. Stir until well-blended
In a medium saucepan, grease with cooking oil and apply low heat.
Scoop a part of the mixture (¼ to ½ cup) and then pour into the pan. Cook until edges are dry and the bottom is browned, and then flip. Cook until both sides are browned and fluffy. Repeat this step for the rest of the batter.
Transfer to a serving plate. Serve with syrup and/or toppings. Enjoy!
