Pinoy Style Carbonara Recipe

A unique Filipino take on the famous Italian pasta

Equipment

Ingredients

  • 450 g (15.8 oz) spaghetti pasta
  • 250 g (8.8 oz) bacon, cut into half-inch slices
  • 1 cup button mushroom, sliced
  • 4 cloves garlic, minced
  • 2 cups all-purpose cream
  • 2 tbsp butter
  • ½ cup parmesan cheese
  • 1 cup meat broth, (pork, chicken, or beef)
  • 6-8 cups water
  • salt and pepper, to taste

Instructions

  • In a cooking pot, pour-in the water, then add-in salt as desired. Bring to a boil.
  • Add-in the spaghetti pasta. Cook for 8 to 10 minutes or until slightly firm. Drain and set aside.
  • In a cooking pan, add-in the bacon. Cook until fat comes out and crispy. Set aside.
  • In the same cooking pan leaving a small amount of bacon fat, add-in the butter, and minced garlic. Saute until aromatic.
  • Add-in the sliced mushrooms. Cook until tender.
  • Pour-in the meat broth, and all-purpose cream. Mix well and simmer for 10 minutes or until the sauce becomes slightly thick.
  • Apply low heat and add-in parmesan cheese. Season with salt and pepper as desired.
  • Add-in the pasta, and the bacon. Mix until well-incorporated with the sauce.
  • Transfer to a serving plate or serving tray. Serve with additional parmesan cheese as needed. Enjoy!
