Bok choy has a light sweet and peppery taste. It is present in several asian cuisines and is often eaten on its own by steaming or blanching.

In the marketplace, you’ll also encounter baby bok choy. It is a younger, smaller version of bok choy. It is sweeter in taste and has a more tender texture. You can also use baby bok choy for this recipe, watch out for our tips and notes on using this.

Notes on ingredients

Bok Choy

For this recipe, you can either use bok choy or baby bok choy. Read our tips when it comes to cutting and rinsing in case you will be using the latter.

Garlic

In this recipe, we will be using fresh garlic then fry them. However, you can also use bottled fried garlic in case you have access to them. Simply skip the frying part when you would opt to use fried garlic.

Sugar

The recipe calls for white sugar, but you can also use equal parts of brown sugar for this.

Spring Onions

Spring onion is a staple in Chinese cuisine. This is an optional ingredient or topping for this dish. Simply cut them up to bits then sprinkle over your cooked Bok Choy with Garlic and Oyster Sauce.

Equipment You’ll Need

  • Cooking Pan (Kawali)- You will need a regular cooking pan or kawali to cook this dish. It depends on the amount you’ll be cooking but a frying pan or skillet will also work for this.

How to Cook Bok Choy With Garlic And Oyster Sauce

Let’s get into cooking this! There are 3 major parts for the whole cooking process. The 1st part involves preparing the bok choy. The 2nd part involves making the special sauce. And for the 3rd and last part, we will be cooking the bok choy with the sauce.

When cleaning the bok choy, our goal is simple: get rid of dirt like soil and sand. Cut off the bottom part (the one holding the stems together) of the bunch. When working with baby bok choy, you can simply detach each stem from each other since the bottom part isn’t big yet.

For the 2nd part, we simply combine the ingredients together then stir. We will then cook the mixture with the fried garlic and let it boil.

Lastly, we will cook the prepared bok choy with the sauce. This part will be swift since we don’t want to overcook the bok choy. Our goal is for the sauce to thicken up a bit and we’re done.

Cooking Tips

  • When rinsing bok choy or other leafy vegetables with water, remember to lift the leaves before discarding the water. Dirt tends to deposit at the bottom and we don’t want them to get back to the leaves again.
  • In case you’re rinsing baby bok choy, just wash them with running water instead.
  • Dry the leaves with a clean towel or paper towel after washing. This will help the bok choy cook faster.

How to Serve Bok Choy With Garlic And Oyster Sauce

Bok Choy with Garlic and Oyster Sauce is best served right after cooking. Pair it with steamed white rice and a light flavored soup. You can eat it as a viand or as a side dish to another viand like fried or grilled meat.

How to Store and Reheat Bok Choy With Garlic And Oyster Sauce

In case you have leftovers, you can transfer the ginisang munggo into a covered container and refrigerate it for up to 3 days.

To reheat, simply transfer to a cooking pan and apply medium heat until warm enough. You may add more water to rehydrate it up but make sure to adjust the seasoning accordingly.

Ingredients

  • 3 bunches bok choy (or baby bok choy), cleaned and bottom end removed
  • 2 tbsp oyster sauce
  • 1 tsp granulated white sugar
  • 1 tbsp minced garlic
  • 10 tsp water
  • Ground black pepper, to taste
  • 1/4 tsp sesame oil
  • 2 tbsp cooking oil

Instructions

  • In a small bowl, combine the oyster sauce, sugar, sesame oil, and water. Stir and set aside.
  • Pour-in the cooking oil and add the garlic in a cooking pan. Apply medium heat.
  • Cook the garlic until it starts to turn light brown.
  • Pour-in the oyster sauce mixture in the pan and sprinkle some ground black pepper. Stir and let boil.
  • Add-in the bok choy, stir, then cover.
  • Cook until the sauce reduces to half.
  • Transfer to a serving plate. Serve and enjoy!
