What is Pilipit?
Pilipit (sometimes interchanged with Shakoy or Bich0-Bicho) is a well-known type of pastry or doughnut here in the Philippines. It is basically a pastry which is shaped into a rope-like structure and is then coated with either sugar or syrup, and it is traditionally made with either regular flour or rice flour.
These two versions have some differences when it comes to the texture. The rice variant tends to be soft and sticky while the flour is the crunchier version. The good thing about the flour can be stored for longer.
The word pilipit came from the Tagalog word which means “twisted,” as you can see from its shape. There are also other Tagalog names used such as lubid or pisi but they literally mean rope, which can also be considered as a twisted form because of its orientation.
Ingredients You’ll Need
This recipe makes use of regular bakery ingredients like flour, milk, salt, and cooking oil.
For the Coating
For the final touches of this pilipit bread, this recipe uses powdered sugar, as it is a simple yet tasty choice for the pilipit, but some other recipes use other toppings or sweeteners such as a sweet syrup.
Other people prefer to skip the sprinkling part and choose to have different kinds of dips for the bread, usually sweet ones such as chocolate dips. If you want to test out other flavors for the bread, you’re free to do so.

How to Make Pilipit
When it comes to making pastry, it sure seems intimidating because you might think that you need some kind of experience first before attempting to do one, but don’t worry, as making this pilipit is fun and exciting, and it is not that hard at all.
In fact, you will only need at least five ingredients to make the whole bread, and it is very delicious.
First off when making the pilipit, you need to make the dough. This is done by mixing the ingredients until you form a nice and thick consistency.
Once that’s done, you can wait for a while and let the dough rest for about 20 minutes. This is a good idea because the gluten in the dough relaxes and it will be easier for you to manage the dough.
After that, the next step is to flatten the dough and cut it in half. These two halves will then be made into long strips. This is what you will make into a pilipit. Put the two ends of the long strip and then twist until a rope-like dough is made.
The last step to be done is to cook all of these bread through frying them. Just cook until they turn golden brown. Remember to dry the excess oil using paper towels, or leave in a wire rack and let it rest.
The only thing left to do is to sprinkle the powdered sugar all over the pilipit breads and you’re done!
How to Serve Pilipit
Pilipit is best served fresh and warm as a snack or merienda. This is where the texture is soft and chewy. Pairing it with coffee or tea is a good way to go.
How to Store and Reheat Pilipit
When storing pilipit, make sure it is completely cool, then transfer it to a clean food container with lid. You can chill this in a refrigerator for up to 3 days. To reheat, you can use a microwave oven but it’ll be better to use a conventional oven or an oven toaster. Set the temperature at 175 C (347 F) and heat for at least 5 minutes.
